Oat and Granola Bar

Yield: 14 servings


2 cups rolled oats

1 cup sliced almonds

1/2 cup wheat germ

1/2 cup honey

2 large egg whites plus 1 yolk

1/4 cup olive oil

1/4 cup sucanat or rapadura

2 tsp vanilla extract

1/2 tsp sea salt

1 1/2 cups chopped dried fruit of your choice

1/2 cup natural butter (peanut or almond)


  1. Preheat oven to 350 degrees.  Line baking sheet with parchment paper.  Combine all ingredients except salt, dried fruit and nut butter on a baking sheet and toast, tossing occasionally, until golden brown, about 15 minutes.  Set aside to cool.  Lower heat to 300 degrees.
  2. Meanwhile, line a 9×11 inch glass baking dish with parchment paper.  Set aside.
  3. Whisk the salt, dried fruit and peanut butter in a large bowl, add toasted mixture and combine until evenly coated.
  4. Pour mixture in baking dish and press down evenly.  Bake for 25 minutes.  Cool for 10 inutes before cutting and serving.
