Yield: 14 servings
2 cups rolled oats
1 cup sliced almonds
1/2 cup wheat germ
1/2 cup honey
2 large egg whites plus 1 yolk
1/4 cup olive oil
1/4 cup sucanat or rapadura
2 tsp vanilla extract
1/2 tsp sea salt
1 1/2 cups chopped dried fruit of your choice
1/2 cup natural butter (peanut or almond)
- Preheat oven to 350 degrees. Line baking sheet with parchment paper. Combine all ingredients except salt, dried fruit and nut butter on a baking sheet and toast, tossing occasionally, until golden brown, about 15 minutes. Set aside to cool. Lower heat to 300 degrees.
- Meanwhile, line a 9×11 inch glass baking dish with parchment paper. Set aside.
- Whisk the salt, dried fruit and peanut butter in a large bowl, add toasted mixture and combine until evenly coated.
- Pour mixture in baking dish and press down evenly. Bake for 25 minutes. Cool for 10 inutes before cutting and serving.
